What is "Spalted" Pecan?

Spalted Pecan is not a commercially available wood.  It comes from trees in central Texas that have fallen in storms, that have been cut as non-producing trees in pecan orchards, or that have been cut because of road or building construction.  We select spalted pecan boards for as much color, character, and spalting as possible.  This wood is rare.  Because of this, there is sometimes a waiting period for Spalted Pecan.  But, it is well worth the wait...  Just look at the character in these tops.
